Meatballs & Pasta

2 lbs. ground beef
2 eggs
2 onions (1 diced & 1 sliced in strips)
2 green peppers (1 diced & 1 sliced in strips)
1 cup bread crumbs
2 T. catsup
2 T. garlic powder
2 large cans crushed tomatoes
2 T. Italian Seasoning
I pound pasta of your choice

Mix meat, eggs, catsup, diced onions & diced peppers, bread crumbs, 1 T. of each seasoning. Mix them together well, and form into small balls about 1 inch round. Place in deep roasting pan, pour crushed tomatoes and sliced onion & peppers and rest of seasoning over the balls. Cover bake in oven for 2 hours at 350 degrees.

Boil the pasta of your choice as directed on package, strain and set aside.

You can freeze in containers the meat balls & sauce. Remove from freezer 1 hour before use. When thawed, heat in microwave for 10 minutes.

You can freeze in zip-lock bags the cooked pasta. Take out at least 1/2 hour ahead and place in hot water. When thawed put into hot water to heat only. Strain and serve.
