Golden Raisins and White Chocolate Chips Muffins

Yield: 12 large muffins

1 egg
1 ½ cup flour
1 cup cooled cooked oatmeal with 3 tablespoons butter melted in
1/2 cup sugar
½ cup applesauce
½ cup shredded coconut
¼ cup bran
½ teaspoon artificial orange flavor
1/4 teaspoon cinnamon
1/4 teaspoon allspice
¼ teaspoon cloves
Milk*
4 teaspoons baking powder
1 cup lightly floured golden raisins
1/3 cup lightly floured white chocolate chips

Beat all ingredients together, except for the milk, baking powder, white chocolate and golden raisins.

*Add just enough milk (if necessary) for the mixture not to clump in the beaters. Add baking powder, beat rapidly to mix evenly, fold in white chocolate chips and golden raisins and dispense muffin batter in muffin pan lined with cupcake paper molds.

Bake at 375°F for 25-30 minutes.
