Prune Nut Bread

Sisters, we all know constipation is a BIG deal in post op.
Some may not be keen on Prunes, but here is a prune bread that is so delicious that you won't notice it is so good for you AND has the fiber you need to help you.
I DO NOT take credit for it, I got it off the back of a SPARTAN brand box of prunes DH bought for me!!!

1cup pitted prunes
2tsp shredded orange peel
1 cup orange juice
2 cups flour
3/4 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2 eggs
2tbsp salad oil
1/2 cup chopped walnuts

Snip prunes into greased 9x5x3 inch pan. Add orange peel and juice and let stand for half an hour.
Heat oven to 350F.
After half an hour add remaining ingredients into the pan with the prunes and juice. Beat well with fork until blended (about 2 mins) scrape pan after beating one minute.
Bake for 50-55minutes.

VERY DELICIOUS!
