Hyster Muffins

This should probably go somewhere where both post op and pre op can use it, so if lovely hosts want to move it, by all means!

Being duly warned by our family here at Hyster Sisters of the problems of getting digestive system working properly after Surgery, I came up with these doozies.
They taste really good and are pretty easy!

I baked a large batch of these a couple days before going in for my Hysterectomy, and put them in the freezer after they cooled. I had my husband bring me one every day in the Hospital and ate one loaf every day when I got home for at least the first week.
(One small loaf is equal to about 2 or 3 muffins)
Works Fabulously!!!!

Hyster Muffins (with Vegan Options)

(Single recipe amts in parentheses, but then you’ll have to make more)

Preheat oven to 350
In a large bowl, combine and stir well:

4 (2) cups All Purpose or Whole Grain flour
3 (1½) cups Bran. (The box I used had abt 3½ cups in it, so I just dumped it all in!)
4 (2) Tbsp of Sugar or sugar substitute (Splenda worked well)
½ ( ¼ ) tsp Salt
2½ (1¼ ) tsp Baking Soda
Opt: 4 (2) Tbsp Grated Orange Rind

Beat in a Large Mixer:

4 (2) cups Buttermilk (Soy Milk with 2 (1) Tbsp Vinegar)
2 (1) Beaten Egg (or Liquid Egg Substitute)
1 ( ½ ) cup Molasses
4-6 (2-3) Tbsp melted, cooled Butter (Soy Margarine)

Add the Dry Ingredients gradually into the main mixing bowl, Beating well in between

Add 1 ½ ( ¾ ) cups coarse chopped Prunes or as many as you have. (YES, PRUNES, no substitute unless you’re allergic. I promise you won’t even taste them)

Pour into muffin tins or small loaf pans (the ones that are 4 loaves to a pan are ideal)

Bake about 25 min or more for loaf pans. Test that knife inserted in center comes out clean)
