Any one have any suggestions on food that can be prepared ahead of time and frozen so that the family can just heat it up. I have a teenage student of mine coming to the house during the days to help out and my husband is not a very good cook, so I wanted to prepare a bunch of meals this weekend for eveyone. Thank you in advanced.

Easy Cookin'

Hi!

We have one of those George Forman grills and have already started stocking up on simple meats (chicken breasts, lean beef and pork, etc) and sliced cheese for grilled cheese sandwiches (did I mention I'm, part mouse, lol). In addition, my hubby wil pick up fresh veggies a couple of times a week and slice them.

This will make it easy for whoever is doing the cooking and I'll be able to manage some of it on my own.

I'm a diabetic and carb counter so I don't do a lot of starch but, we will likely make pasta and some brown rice and refrigerate it "naked" so it can be combined with other things.

I had made lasagna, chili, pasta sauce with meat, pea soup, chicken & dumplings, meatloaf and eggplant parm. before surgery & froze all of it! I also bought & froze a lot of red meat, chicken & pork chops to be grilled.

I also had on hand those frozen veggie (Add chicken) dinners along with a few frozen pizzas, the chinese delivery number, pizza delivery number and the phone number for Applebee's take-out!

I found those individual packets of macaroni and cheese to be wonderful - light food, easy to eat, easy to prepare in the microwave (heat water with macaroni, add cheese, stir).

They were just the right size for my smaller appetite after surgery - as my appetite got better, I could have two of them for lunch.

These are all very good suggestions. Does anyone have any good casserole recipies or other full meal recipies that can just be heated up? I have a husband and three kids to feed also, so I need to make as much food as possible. I have a friend who offered to bring over some meals, but she is a bit unreliable so I am not counting on that food!

Hi Dove, I was just checking out some casserole recipes online here is one link of many I found by typing in Casserole recipes in my search bar.
