Zucchini Pineapple Bread

Preheat oven to 350 degrees:

Grate 1-1/2 cups zucchini:
Drain 8 ounce can crushed pineapple:

In large bowl beat:
2- cups sugar
3-eggs
1-cup oil
2-teaspoons vanilla until foamy..

In a separate bowl mix:
3-cups flour
2-teaspoons baking soda
1-teaspoon salt
1/2 teaspoon baking powder
1-1/2 teaspoons cinnamon
1-teaspoon nutmeg



Combine with egg mixture;stir in zucchini

Add 1-4ounce box french vanilla pudding mix:

Optional 1 cup pecans and 1/2 cup raisins:

Pour into 2 greased and floured 9X5 inch loaf pans.

Bake 1 hour or until toothpick inserted in center comes out clean..

Sounds great. I am going to try and make this recipe. It is similar to one I used before. When you said to add zucchini, did you mean with the pineapple at the same time?
