Cheese Casserole Bread

I made this for Christmas and got nothing but raves. It's one of those recipes which seems putsy but really isn't. Enjoy!

Cheese Casserole Bread



2 c. warm milk (105-115 degrees)

2 pkg. active dry yeast

3 T. sugar

1 T. butter

½ t. salt

4-½ cups all-purpose flour

6 oz. cheddar cheese, cut into ½ inch cubes

3 T. diced onion



In large bowl, combine milk and yeast; stir to dissolve yeast. Add sugar, butter and salt; stir until butter is melted. Stir in 3 cups of the flour; beat until smooth. Stir in remaining flour, onion and cheese; mix well. Pour batter into well-buttered 1-½ quart round glass casserole. Cover loosely with waxed paper; let rise in warm place until doubled, about an hour. Bake in preheated 350 degree oven for 50 to 55 minutes or until toothpick inserted into center comes out clean. Let cool in dish on wire rack for 10 minutes. Loosen edge; remove from dish. Cool slightly on wire rack; serve warm with butter.


Note: When you let the batter rise, it will get to be a few inches above the top of the casserole dish, so make sure you allow enough wax paper!! Also, sometimes I cut up a little extra onion and cheese and arrange it over the top of the loaf before I bake it….. Enjoy!
