Potato Rolls
- 1 yeast cake
- 1/2 cup luke warm water
- 2/3 cup shortening
- 1/2 cup sugar
- 1 tsp salt
- 1 cup mashed potatoes
- 1 cup scolded milk
- 2 eggs - well beaten
- All Purpose Flour
Dissolve yeast in the water. Put aside.
Add shortening, sugar, salt & mashed potatoes to the scolded milk. Cool.
When it is cold then add the yeast mixture. Mix thoroughly and add the eggs.
Stir in enough flour to make stiff dough. Turn dough on lightly floured surface. Knead the dough well.
Put in a large bowl. Rub over with melted butter. Cover tightly & put in refrigerator.
About 1 hour before baking time, pinch off dough & roll into small balls. Add 3 balls of dough to muffin tins. Cover & Let rise until light.
Bake at 425 for 15 to 20 minutes.
