Macaroni & Shrimp Salad

This makes a nice summer side dish....good without the shrimp, too

1 lb cooked twisty macaroni
1 lb cooked, cooled shrimp
4 Green onions, cut in 1" pieces
1/4 Cup sliced green olives
1/4 Cup chopped parsley
12 Cherry tomatoes


Dressing

1/4 Cup olive or veg oil (i use olive)
1-2 TBS lemon juice
1 Tsp minced garlic
1/2 Tsp salt
1/4 Tsp pepper

Toss salad w dressing right before serving.


I do the dressing in advance to give the flavors a chance to combine, then take it out of the fridge about twenty minutes before serving. I also cut the shrimp into bite-size pieces
