Moist Apple-Walnut Bread - by Pattygefa

1/2 cup (1 stick) Butter 1 tsp. pure Vanilla Extract
3/4 cup Granulated Sugar 1 3/4 cup unbleached All- 2 large Whole Eggs Purpose Flour
2 large McIntosh Apples 1/2 tsp. Salt
(peeled & grated) 1 tsp. Baking Soda
1/2 cup chopped Walnuts 1 tsp. Baking Powder


Preheat the oven to 350 degrees. Grease a 4 1/2 x 8 1/2 inch loaf pan and set aside. With an electric mixer, cream the butter & sugar until light & fluffy. Add eggs, one at a time, beating well after each addition. Combine apples, walnuts, & vanilla. Fold apple mixture into the butter mixture & stir well to combine. Sift dry ingredients together & gradually add to the wet ingredients, stirring well to combine. Pour the batter into the greased loaf pan and bake in a pre-heated oven for 1 hour, or until toothpick inserted in the center comes out clean. Makes one 8 1/2 inch loaf.
