Pumpkin Cheesecake

I am going for the GOLD on this one.. I really want that bed tray for when I have my hysterectomy Dec 9th>>
Pumpkin Cheesecake
• CRUST:
• 1 cup graham cracker crumbs
• 1 tablespoon sugar
• 4 tablespoons butter or margarine, melted
• FILLING:
• 2 (8 ounce) packages cream cheese, softened
• 3/4 cup sugar
• 1 (16 ounce) can pumpkin
• 1 1/4 teaspoons ground cinnamon
• 1/2 teaspoon ground ginger
• 1/2 teaspoon ground nutmeg
• 1/4 teaspoon salt
• 2 eggs
• TOPPING:
• 2 cups sour cream
• 2 tablespoons sugar
• 1 teaspoon vanilla extract
• 12 pecan halves
DIRECTIONS
1. Combine crust ingredients. Press into bottom of a 9-in. springform pan; chill.
2. For filling, beat cream cheese and sugar in a large mixing bowl until well blended. Beat in pumpkin, spices and salt. Add eggs, one at a time, beating well after each. Pour into crust. Bake at 350 degrees F for 50 minutes.
3. Meanwhile, for topping, combine sour cream, sugar and vanilla. Spread over filling; return to the oven for 5 minutes. Cool on rack; chill overnight. Garnish each slice with a pecan half.

Here is one so easy, while mom is busy, kids can make
1 large box instant chocolate pudding
1 ready made grahm cracker pie crust
Make pudding as directed, then pour into pie crust, and refrigerate
About 2 hrs
Serve and enjoy

Wonderful with Turkey!

Ambrosia:

INGREDIENTS
1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can pineapple chunks, drained
1 cup miniature marshmallows
1 cup flaked coconut
1 cup sour cream






DIRECTIONS
In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.

I really can't cook so here is my contribution

Olive Garden's Salad Dressing:

Ingredients
1/2 C. Mayonnaise
1/3 C. White Vinegar
1 tsp. Vegetable Oil
2 Tbsp. Corn Syrup
2 Tbsp. Parmesan Cheese
2 Tbsp. Romano Cheese
1/4 tsp. Garlic Salt - or one clove garlic minced
1/2 tsp. Italian Seasoning
1/2 tsp. Parsley Flakes
1 Tbsp. Lemon Juice

Directions
Mix all ingredients in a blender until well mixed.
If this is a little to tangy your own personal tastes add a little extra sugar

Easy Appetizer

Get 2-6 Goat Cheese Logs(depending on # of people) and one tub of creme fresh.
get FRESH not dried- chives, italian flat leaf parsley, mint and thyme.
Leave the Goat Cheese/creme fresh out so that it will soften. Finely chop all fresh herbs, put into medium size bowl, slice a lemon in half and squeeze the juice into the herbs in bowl; ***little tip, put lemon in microwave for 10 secs and that will loosen all thr juices.***make sure you squeeze with the open side up so that the seeds don't go in. Take a micro plane or small shredder and shredd a tiny amount of the lemon zest into bowl. Don't go as far as the white part of the lemon because that part is bitter. Add a pinch(1/4 tsp?) of sea salt and a few twists of fresh ground pepper. Add in your softened cheeses(if they sren't soft enough to mix, pop in microwave for 10-20 secs) mix all ingredients together. MOST important...do a taste test, you'll know if it needs something more! Put into serving dish, wrap with saran and put in fridge, until almost party time. Take out and sprinkle with some of the fresh herbs and a lemon twist on side of dish add serve with melba toast or bagel chips.

Super Easy and ALWAYS a hit!! you can serve it with veggies too, but hey, i say party = reason to have carbs!!

I don't usually measure and I get all of the herbs from my garden, so it's hard for me to write/type it!! I also use it as a topping om salmon. If you like Like salmon, spread some of the mixture on top if it and bake at 450 for about 15-20 minutes. you can tell b/c the color of the fish changes. It's Delicious!

My favorite is Corn Casserole, and it's SUPER easy!!! Not to mention, inexpensive too.
Everyone in my family LOVES it, and all my friend who eat it have to have the recipe.

1 can cream corn
1 can whole kernel corn (drained)
1 small box of Jiffy Corn Muffin Mix (about 33 cents!)
1 stick of butter
1 8oz block of cream cheese
and a handful of cheese to sprinkle on top.

Melt butter and soften cream cheese, Mix together.

In large bowl, put cream corn and drained whole corn. Add butter and cream cheese. Then add Jiffy Corn Muffin Mix. Place in casserole dish. Sprinkle with shredded cheddar cheese. Pop it in the oven on 350 for 45 minutes.

Enjoy!

My favorite thanksgiving desert is; Cherry surprise, two cans cherry pie filling,one white cake mix,one 1/4 stick butter. Pour cherrys into a 13"x9" cake pan, spread dry cake mix over cherries,slice butter to cover all of cake. Bake at 350 fo 50 min or till top is brown.

ok I want to win and I have more recipes
orange cream cheese biscuits
1 stick butter
juice and zest from 1 large orange
1 1/2 cups sugar
1 package biscuits
1 8 oz. cream cheese
preheat oven according to biscuit directions, grease baking pan.
melt butter mix in orange juice
In a seperate dish,combine sugar, and orange zest
working w/ 1 biscuit at a time, oinch off cream cheese and press into biscuit until hidden, roll in butter and sugar place on prepared pan and bake as directed

And he is one more, we don't do cranberry sauce instead I make a raspberry dip
you will need
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup chopped green onion
1 cup miricle whip
3/4 cup pecans
about 5 oz of raspberry jam w/ seeds
mix together cheddar cheese and mozz cheese, green onion amd miricle whip, cover plate w/ plastic wrap, cover w/ pecans, spread cheese mix over nuts, cover and seal w/ plastic wrap, refriegerate 3-4 hours
uncover flip onto a second plate so nuts are on top, spread jam over top, serve w/ crackers

Candied Yams with marshmallows

Everyone always make these differently I have tried a lot of different ways but this is the easiest as well as the very tastiest dish and look stunning too!!

1 Large can Yams, Drained
3/4 cup walnuts
1/2 cup brown sugar
1/2 cup light Karo Syrup
1 cup or so of mini marshmallows

Add yams to baking dish mix in walnuts, brown sugar, karo syrup gently toss to mix together not to mash up
yams.

Add Marshmallows to top of mixture gently press to make even layer of them and bake 350 till Marshmallows are golden brown usually about 12-15 min.
This is a GREAT dish for any Thanksgiving or Christmas or even Easter DINNER! Enjoy!
