I actually got this reciepe out of one of those protein diet books. It is VERY good, VERY filling and VERY easy.

1 package of boneless, skinless chicken breast
1 8 oz. package of cream cheese
2 cups of shredded cheese (any kind)
toothpicks
1 package of bacon
olive oil

Cook the bacon in a frying pan and set aside. Get the thawed chicken and pound out as flat as you can get it. Spread the cream cheese onto the raw chicken. (At this point you can add a little bit of dill seasoning if you wish) Add the cream cheese to every other piece. So, if you only have four pieces of chicken, you're only putting the cream cheese on two. You do not have to use the entire 8 oz. container of the cream cheese...just thought I'd point that out...heheheee!!! So, you've spread the cream cheese......now get a piece of raw chicken that you have not spread the cream cheese on and put the two pieces together. Just ontop of one another. Get your toothpicks and scewer (sp?) them together. In a frying pan, put about a tablespoon of olive oil...warm up. Place the chicken in the frying pan and flip occasionally. Make sure the chicken gets cooked all the way through. Once you pull the chicken from the pan, sprinkle shredded cheese and crumbled up bacon on and serve. It's quick, fairly inexpensive and the whole family will love it. VERY filling.

All depending on what kind of diet you're on.....but like I said, this DID come out of the protein diet book. It's got fat, but it's high in protein.
