Recipe: salmon

OK, we are NOT a wealthy family, not even close, but we've been fortunate to have had some great experiences. Once we WON a trip for the entire family (8 people!) to Jamaica. It was amazing. Then, because the highschool needed someone to host a couple of french girls during the summer, we were able to do that (did it 1 more time so far after that), had a wonderful time & now have friends in France! We were invited by them to visit, so we shopped for cheap airfare & got to go spend time with them in the french alps & with their daughter in Brussels, Belgium. I told you we were lucky!!! Anyway, this is the long way to tell you that the following dish was prepared for us by a lovely young french woman in her apartment in Brussels!!! She added a simple salad, good bread & both red & white wines. Yummm. Dessert was a fruit cobbler. Oh my gosh, how I long to go back!

For each serving, on a piece of aluminum foil, she placed:

fresh baby spinach leaves, topped with

a salmon filet, then she spooned on top

diced tomatoes from a can that come with a thick sauce, not watery
(you can find it but you have to look through the many varieties of canned)

spoon on 1T cream (just 1 T should be OK, there's nothing else bad in this dish!)

sprinkle on ground ginger, salt & pepper

seal up the packet like a balloon and bake for approx 10-15 min.

Voila! Bon Apetite!

Thanks Xena! This sounds like it would be hard for me to mess up! I do chicken in foil a lot in the winter and it comes out nice and moist. I do the chix in a very hot oven....what temp for this?

Hi EM,

I really have no idea about the temp. I'm the kind of cook who just wings it sometimes, anyway. I checked with my good friend, Jacques Pepin, who resides on my shelf, & he has a salmon recipe baking 10-15 min at 400.

Xena,

I had it and it was very good.....something I'd expect in a fine restaurant. I had all the ingredients except the tomatoes and cream. I was able to find tomatoes made by Hunts which says "diced tomatoes in sauce" on the label. All the others said "in liquid" or said nothing at all. I got heavy cream. That has 5 gm of fat but certainly can fit into a low-fat diet by being careful with the rest of the foods. I cooked it at 400 for 20 minutes and it was mouth-watering.

We really need to get this in BEST's answer to a cookbook. Your post won't come up in the search because it doesn't say RECIPE: in the Subject line. Maybe when this thread starts moving down you could do it again on a new thread?

Oh, EM, I'm so glad you enjoyed the salmon! It is a good recipe, isn't it?

Yes, Xena......it worked fine. Here's how to search for it.

-Click on the purple search button on top
-Type RECIPE in the search box labeled "search by keyword"
-Choose B.E.S.T. forum where it asks which forum
-Choose "search Title's only" where it gives you some choices

And go for it! All our threads with "recipe" in the subject line will come up.
