Paleo Sugar-Free Zucchini Muffins

Ingredients

1 mashed small or medium size banana
¼ cup honey
3 eggs
1 tsp vanilla
1 ½ cup grated zucchini
½ apple, grated
⅓ cup unsweetened shredded coconut
1 cup almond flour
3 Tbsp coconut flour
1 tsp baking soda
1 ½ tsp cinnamon
Dash of ground ginger, nutmeg, & allspice (optional)
½ tsp salt
3-4 Tbsp dates or prunes, roughly chopped
4-6 Tbsp walnuts, pecans or other nuts
2 Tbsp chia seeds (optional)


Instructions

Preheat your oven to 350 F.
Whisk together the mashed banana, honey, eggs and vanilla. Stir in chia seeds and let sit for a few minutes. Stir in the grated zucchini and apple.

In a separate bowl, stir together the coconut, almond flour, coconut flour, baking soda, spices and salt.

Add the wet mixture to the dry, and stir well until combined. Mix in the prunes or dates.

Spoon the mixture into a greased or cupcake paper lined cupcake tin. Fill each cup ¾ the way full.

Bake for 35-40 minutes, until a toothpick comes out clean.

Note: if you are not using chia seeds, you may want to squeeze a little bit of water out of the zucchini before adding it.
