Yummy Black Beans & Rice

3 tbsp. oil
1 c. rice
1/2 c. sliced onion
1/4 c. chopped green pepper
1 lb. can tomatoes
2 c. water
1/4 c. ketchup
1/4 -1/2 t. cayenne pepper
1/8 t. black pepper
1 c. black beans, cooked

Saute rice, onion, and green pepper in oil. Add remaining ingredients except black beans. Cover, simmer approximately 25 minutes or until rice is tender. Add beans. So quick and easy!!!!!

Optional: You can add more onions or peppers depending on your tastes. Serve dish with your favorite cheese sprinkled on top.

Yummy! I think I'll have this for dinner tomorrow.

Yum yum yum!! This would be great with some whole wheat tortillas.
