EASY chocolate covered Oreo truffles

I made these with my 7yr old dd yesterday. I just followed every step and they were easy. I am a total amature by the way, and I have never used Crisco!

1 pk oreo cookies
1 8 oz cream cheese
1 pk. choc. flavored almond bark (I used 9 squares out of the 12
1/3 pk of semi-sweet choc. chips
2 tablespoons of Crisco (so the choc. covering stays thin enough to EASILY covere the truffles)
Trays with wax paper

The entire package of Oreos need to be ground into crumbs. No Chunks. I used a hand held stick processor with an attachment. I could only do 7 cookies at a time, but it worked perfect. It will resemble coffee grounds. You can use a large food processor if you have one, or put them in a bag and roller pin them.

If you have a large food processor add the brick of cream cheese to the crumbs. Mix it until it turns into a large clump that looks waxy...it will NOT be crummy at all. I don't have a large food processor so I used my hand held mixer and a large metal bowl. I started on low and worked my way to high. It took about 5-7 min. Cover and refrig. for an hour.

Cover a baking tray with wax paper. Make sure you have room in the freezer to put the tray. Take mixture and roll into balls with your hands. I used a 1 inch mellon baller to keep them small. You can make them any size you want. I got 65 1 inch truffles out of 1 batch. When all rolled place in freezer for 1/2 hour.

While those are freezing, put a pot on the stove with 2 cups of water and place a metal bowl over the pot. Make sure there is NO water in the metal bowl. Put almond bark chunks in and turn the heat on LOW. Slowly melt until nearly melted while stirring. Then add 1/3 bag semi-sweet chips and Crisco. Stir until melted. Turn off heat.

Take truffles out of the freezer. I used two forks to cover the truffles in the choc. Drop one in, move back and forth on the forks gently. Place gently on wax paper pan. Repeat until finished. Place in fridge.

Don't forget to try one first!

You can use other oreos, or nutterbutters. The pb cookies make it very rich. I thought the reg. oreos would be rich too, that's why I kept them small. You can also have your helper decorate the chocolate covered truffle before the covering sets. Because the truffle has been frozen, the c
covering will set quickly.

*Don't add water, oil, butter, milk or anything else to thin the almond bark. Don't overheat the almond bark.

Enjoy. Each separate step didn't take too long, and I did them with my dd. Family loved them. I am going to make it for her teachers for x-mas and put them in cute cups inside x-mas tins.
