Fat-free banana bread... almost!

Fat-Free Banana Bread
(chocolate chips don’t count during your recovery!)

This recipe is so easy, and it’s so good. Slice it, freeze it, and when you need a slice, throw it in the toaster.

3 chunked bananas
2 eggs
2 cups flour
¾ cup sugar
¼ cup milk
1 teaspoon baking soda
½ cup MILK chocolate chips, slightly coated with flour

Pre-heat oven to 350 F.

Butter and flour one loaf pan (that’s the hardest part)

Put all ingredients except the chocolate chips in a large bowl. Mix with an electric beater, notice how much fun it is when a banana chunk passes through the beaters. Blend in the chocolate chips with a spoon, pour into the pan and bake for a hour while someone else cleans up the kitchen.

Thanks for the recipe Chantal! It sounds really good and now that I'm gaining weight from the hormones, I might as well enjoy what I'm eating. Too bad I'm far in my recovery to have someone else clean the kitchen!
