Crock Pot Lamb Chili

I made this last weekend by improvising my usual chili recipe by using lamb meat. It was a bit hit.

Lamb Chili
• 1-2 pds cubed lamb meat <about 1-2 inch pieces> Try and remove most of the fat from the meat if there is any.
• 1 can fire roasted dice tomatoes
• 1 can tomato sauce
• 1 can tomato soup
• 2 diced carrots
• 3-4 serano peppers (deseeded and diced>
• Minced garlic (4-5 cloves, more if you love garlic)
• ˝-1 cup Minced cilantro
• Salt and pepper to taste
• Chili powder <to taste>
• Garlic powder <to taste>
• 2 tbsp Cumin
• 1 Can Black beans, drained and rinsed
• 1 Can Chili beans
Season cubed lamb meat with chili powder and garlic powder. Let rest in fridge for a few hours or overnight.
Brown lamb meat in frying pan. Add meat to slow cooker, add canned tomatoes, tomato sauce, tomato soup, black beans, chili beans, cilantro and spices. Simmer on low for 8-10 hours.

I usually add some shredded cheese or parmesan cheese when serving.
Tip: Using a slow cooker liner bag makes clean up after dinner a cinch.
