Vegetarian Boston Mkt Squash Casserole

Boston Market’s Squash Casserole (Topsecretrecipes.com and CopyKat.com)

4 ˝ cups diced zucchini
4 ˝ cups diced yellow crookneck squash
1 ˝ cups chopped yellow onion
1 pkg Jiffy Corn Muffin Mix – prepared as directed on package
1 ˝ sticks butter (or margine)
8 ounces American Processed Cheese Spread (use a store brand not Velveta)
3 chicken bouillon cubes
1 tsp minced garlic
1 tsp salt
˝ tsp freshly ground black pepper
˝ tsp thyme
1 Tbsp chopped fresh parsley

Preparation:
Bake Jiffy Mix cornbread as directed, set aside to cool.
Place zucchini and yellow squash in a large sauce pan and add just enough water to cover. Cook on medium-low heat just until tender, remove from heat and drain squash. Reserve one cup of water for casserole.

On medium-low temperature place all of the butter (or marg) in large sacuepan and saute the onions until the onions turn clear, add salt, pepper, thyme, and parsley. Add chicken bouillon cubes and garlic to onions, stir. Add drained squash and diced cheese, stir. Crumble cornbread into squash and pour the reserved cup of water and mix well.

Place squash mixture in a 13 x 11 inch baking pan that has been sprayed with non-stick spray. Cover casserole and place in a preheated 350 degree oven. Bake for 50 to 60 minutes. Remove cover the last 20 minutes of baking time.

Yield: 8 servings

Comments: This is a wonderful way to dress up your standard squash casserole. We found that this casserole is a great replacement for stuffing or potatoes. If you tend to prefer less butter, please add less than is suggested.

just an fyi...jiffy corn muffin mix typically contains lard- which isnt vegetarian.

Chicken bouillon isn't vegetarian, either, but that could be easily swapped for vegetable.
