Spinach Lasagna - Yum, Yum! Spinach Lasagna - Yum, Yum!

Spinach Lasagna - Yum, Yum!

Serves 10 - 12 -

8 oz lasagna noodles
2 pkg. spinach, frozen and chopped
24 oz. cottage cheese or ricotta
1/2 c butter
1 lb. monterey jack cheese, shredded
1/2 t. salt
1/4 t. pepper
1/4 t. garlic powder
2 eggs
1c parmesan cheese, grated

Cook spinach; drain. Combine cottage cheese, butter, salt, pepper, garlic powder and eggs. In greased 9 x 13, alternate layers of noodles (don't have to be cooked), cottage cheese mixture, monterey jack cheese, spinach and parmesan cheese. Repeat. Bake uncovered at 350 degrees for 40 minutes or until hot and bubbly. Let stand 5 minutes before serving.
