Black bean salsa & dip

I came up with this recipe one day while going through my pantry & fridge. The great thing about this is that you can make it as a salsa OR put everything into a food processor and turn it into a dip.

1 large (15-16 oz) can of black beans drained & rinsed

2 scallions chopped up (I use the green and white parts-you can also substitute a couple tablespoons of chopped onion)

1 jalapeno pepper-seeds removed & chopped

1-2 cloves garlic, minced fine

cilantro (a small handful) chopped

1/2 cup of cherry or grape tomatoes, cut in halves or quarters

juice of 1-2 limes

salt and pepper to taste

1 tablespoon olive oil-optional

for salsa:
put all ingredients in a covered bowl and let sit in fridge for at least 1 hour for flavors to blend

for dip:
put all ingredients (I omit the tomatoes for this)in a food processor and pulse until it's mostly smooth. put in a covered bowl in the fridge for at least 1 hour for flavors to blend.
