Prune Spice Cake

1 1/2 cups**** pitted prunes
2 cups*** all-purpose flour
1 1/2 cups**** sugar
1 1/4 teas**** baking soda
1 teas*** salt
1 teas*** ground cinnamon
1 teas*** ground mace
1/4 teas* ground cloves
1/2 cup** cooking oil
3*** eggs

Cover prunes with water in a small saucepan. Cover saucepan and simmer 20 minutes or until tender. Drain, reserving 2/3 cup of the liquid (add water if necessary). Chop prunes in the blender, (makes about 1 3/4 cup thick pureed prunes) set aside. Stir together the flour, sugar, baking soda, salt, and spices. Add the reserved prune liquid and the oil and the eggs. Mix to blend. Beat vigorously for 2 minutes. Stir in the prunes. Pour into a greased and floured 13 X 9 X 2-inch baking pan. Bake in a 350 F oven for 35 minutes or until done. Cool. Drizzle with powdered sugar glaze, if desired, or serve with hard sauce.

In lieu of cake, recipe also makes 36 small or 30 larger 2 1/2 -inch cupcakes.

Hard sauce is generally a butter/powdered sugar mixture flavored with brandy or just vanilla, like a thick frosting, only it's usually served on the side, or with a dollop on top, served like a dab of whipped cream.

And I'm gonna make this. It sounds yummy.

Kathy, I'm going to try your recipe, but will substitute gluten free flour mix. Love this part of the site!
