Thumbs up - Microwave Steamed Veggies.....A Sure Hit!! Microwave Steamed Veggies.....A Sure Hit!!

9-inch round, or square, glass baking dish

Plastic wrap

1/2 cup fresh baby carrots

1 cup fresh broccoli (cut into fairly bite-sized blooms)

1 red bell pepper, thickly sliced

1 yellow, or orange, bell pepper, thickly sliced

2 solid slices of red onion

1/2 cup thick sliced fresh mushrooms (baby portabellas are the best)

salt and pepper, to taste

OLIVE OIL, approx. 1/4-1/3 cup (I like just a smidge more than 1/4)


After washing, chopping and/or slicing...... mix broccoli, carrots and shrooms in the baking dish. Top with an arrangement of the pepper and onion (broken up into rings) slices. Salt and pepper to taste. Drizzle with olive oil. Cover with microwavable plastic wrap. Microwave for exactly 10 minutes (Veggies will be hot, but still CRUNCHY.). BE CAREFUL WHEN REMOVING WRAP....STAY AWAY FROM STEAM.

You can get really creative with this recipe. I use baby corns, squash.....any other stuff for a change, in different measurements......whatever you can fit into that baking dish! Even folks who do not normally eat veggies like these.
