Exclamation - Spinach & Strawberry Salad Spinach & Strawberry Salad

My DH an I belong to a local private dinner club.
They change the menu several times a year
to incorporate seasonal fruits and/or vegetables.
I always like to try new items
and if it is exceptional, I try to duplicate it at home.
Here is one of my "new" favorites!

Spinach & Strawberry Salad

Dressing
1/2 cup sugar
1/3 cup lemon juice (squeezed from 2 lemons)
2 tablespoons purple onion
2 teaspoons Dijon mustard
1/2 teaspoon salt
Put all dressing ingredients into a food processor.
Blend until onion is finely diced.
Set aside until serving.

Salad
1 bag of baby spinach leaves (rinsed and patted dry)
1 small package of fresh whole strawberries
(remove stems and slice thin)
6 oz. can of almonds (chop in food processor if not pre-sliced)

To serve.....
Put a handful (or two) of the spinach leaves on individual plates.
Top each plate with strawberries, then sprinkle on some almonds.
Drizzle on a few spoonfulls of dressing per portion.

(Serves 4 to 6)

Spinach & Strawberry Salad

A girl at work makes a similar salad. She uses mandarin oranges and strawberries tossed with the spinach leaves. We used fat-free bottled raspberry vinegrette dressing and it was DIVINE.
