Smothered Tofu
I adapted this recipe from a vegan recipes website.
You will need:
1 small to medium onion, sliced
Eight mushrooms, sliced (I like to use a mix of cremini and shiitake)
14 oz tofu, sliced into "steaks"
2 tbsp soy sauce
2 tbsp balsamic vinegar
1 tbsp cornstarch (or arrowroot or potato)
1/4 cup water
Saute onion and mushrooms in your cooking oil of choice until they start sweating a bit. Mix the soy sauce and balsamic and set aside. Make your starch slurry and set aside. When they veggies are mostly cooked, remove from pan and add tofu. Cook tofu until it's brown, roughly six minutes. Add onion and mushroom back to pan. Add sauce to pan and lower heat. Add starch slurry, stir, and flip tofu to coat. When sauce is mostly absorbed, remove from heat and serve.
