veggie recipes to share?

Hi, I am trying to get back to a vegetarian diet (incl. dairy products) since I have a med condition that does best when I maintain a veggie diet. I and am wondering if there are any vegetarians out there who have had success losing weight. If so any tips and/or low cal/low carb recipes you can share would be appreciated. I had success on Atkins (so low carb worked for me) but it was aggravating the med condition so I returned to veggie diet. Thanks, peggiesue

This link is to the Prevention magazine's South Beach Diet website. It's the vegetarian thread so they ought to have some good, low-carb recipes there.

You might check out your library for cookbooks so that you can try before you buy. Be careful of recipes using tons of full-fat cheeses...that can rack up the calories pretty quickly!
Bean dishes can be good & filling & low-fat.

Cowlvr just posted a veggie soup recipe. I haven't read it yet but intend to right after this post!

As for losing weight, I think perhaps using low-fat cheeses could help.

btw, I am not a vegetarian but one of our kids is & my sister is, too. So while I don't know much, I know just a little something!
