Mexican Chicken and Beans

Makes 4 servings.

1 lb. boneless, skinless chicken breast stips (like for stir-fry)
1 envelope of taco seasoning mix (we like spicy so I use hot)
1 can Black or Pinto beans, rinsed and drained
1 can whole kernel corn with red and green peppers, Undrained
1/4 cup water

Spray a 10 inch nonstick skillet with cooking spray. Cook chicken over medium-high heat, stir occasionally, until no longer pink inside.
Stir in seasoning mix, beans, corn, and water. Cook over medium-high heat 8-10 minutes, stirring frequently, until the sauce is slightly thichened. Serve with tortillas

BSQ, We had this last night. I put a small dab of LF sour cream on top. And served it with the new low carb, whole wheat tortillas. DH loved it and the tortillas were really good. The wheat ones seemed more filling too.
