Judester's Veggie Tomato Sauce

In a large pot, off heat, open one large can of tomatoe paste, add 2 large cans of of tomato's either crushed or whole (whichever way you like them!) Combine, and put on low-medium heat. Depending on the sweetness of the tomatoes you may want to add a couple of teaspoons of sugar. Throw in a few bay leaves, some crushed garlic, a couple of diced onions, crushed chili peppers (to taste) and whatever else you have in the fridge! I usually throw in heaps of mushrooms, carrots, zuchinni, celery, oh yeah..I just love spinach. I just wash it, chop it up and throw it in...use a lot cause it tends to disappear! Let the sauce simmer for a couple of hours...mmm...mmm...mmm

Cook up your fav pasta. To make things a little interesting, sometimes I buy some low fat ricotta cheese. You can either add this at the end, or slightly warm the cheese, and add a little dolop on top. Feta is also really good, if you are using this kind of cheese, add some chopped up black olives! Or just use your fav grated romano! Enjoy...

I realize that some vegetarians do not eat cheese. Tofu is also nice chopped up in this sauce.
