RECIPE:Chicken Roll - Ups

( serves two )

2 boneless,skinless chicken breasts
2 thin slices of deli ham
2 thin slices of cheese (any variety you like; low or non fat make it even healthier -- I used soy pepperjack, it was great !)
dried thyme
Dijon mustard
1 egg (or equivalent egg subsitute)
2 TBSP water
1/2 Cup Pepperidge farms Herbed Stuffing Mix

Place chicken between sheets of heavy-duty plastice wrap or waxpaper & flatten to thickness of 1/8 to 1/4th inch using meat mallet or rolling pin. Season each chicken breast with pepper. Sprinkle each with a pinch of thyme. Top each breast with 1 ham slice & 1 cheese slice. Spread each with mustard. Roll up as tightly as possible, securing with tooth picks.

Place stuffing mix in plasstic bag & crush to coarse crumbs.

Whisk together egg ( or egg sustitute) & 2 TBSP. water in a shallow bowl. Dip chicken rolls in egg mixture, then dredge in crushed stuffing mix. Place rolls on a lightly "Pam" sprayed baking dish.

Bake at 375 degrees until chicken is done, about 35 minutes.

(*this is another GREAT one from my step-dad* I made it last night and DH said he wants it at least once or twice a month !)
