CROCKPOT CHICKEN AND VEGGIES

4 bones and skinned chicken breast halves, frozen
1 bag frozen mixed vegetables
1 can cream of mushroom soup
1 package egg noodles

Take 2 frozen skinless boneless chicken breasts and put in the
crockpot. Add a bag of frozen mixed veggies. Pour a can of cream of whatever (celery, mushroom, chicken, etc. - reduced fat, of course!) over chicken and veggies. Put on the lid and turn on. Got to work. Come home. Cook the noodles and go relax a bit. When the noodles are done, put the stuff in the crockpot on top. Voila! Supper is ready!
Makes 4 servings. Each: 6 POINTS

CROCKPOT FAJITA STEW

2-1/2 lbs. boneless beef top round steak
1 onion, chopped
1 (14 oz) can diced tomatoes, undrained
1 (1 oz) envelope fajita seasoning mix (about 2 tbsp)
1 red bell pepper, cut into 1" pieces
1 green bell pepper, cut into 1" pieces
1/4 cup flour
1/4 cup water
4 cups hot cooked rice

Trip excess fat from beef and cut into 2" pieces. Combine with onion in a 3-4 qt. slow cooker. Mix together fajita seasoning mix and undrained tomatoes and pour over beef. Place peppers on top. Cover crockpot and cook on low for 7-9 hours until beef is tender. Combine flour with water in a small bowl and stir well to mix. Add gradually to crockpot and stir well. Cover slow cooker and cook on high for 15-20 minutes until thickened, stirring occasionally. Serve stew with hot cooked rice.
Makes 8 servings. Each: 8 POINTS

CROCKPOT SWEDISH CABBAGE ROLLS

12 large cabbage leaves
1 lb. lean ground beef
1 beaten egg
1 cup cooked rice
1/4 cup milk
8 oz. tomato sauce
1/4 cup finely chopped onions
1 tsp. brown sugar
1 tsp. salt
1 tsp. Worcestershire sauce
1/4 tsp. pepper
1 tbsp. lemon juice

Immerse cabbage leaves in large kettle of boiling water for about 3 minutes or until limp; drain. Combine egg, milk, onion, salt, pepper, beef, and cooked rice. Place about 1/4 cup meat mixture in the center of each leaf; fold in sides and roll ends over the meat. Place in a crockpot. Combine tomato sauce with brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls. Cover and cook on low 7-9 hours.
Makes 6 servings. Each: 6 POINTS

CROCKPOT APPLE PIE BREAD PUDDING

12 slices reduced-calorie white bread, torn into medium-size pieces 3-1/2 cups cooking apples, cored, peeled, and chopped
1 cup unsweetened apple juice
1/2 cup diet lemon-lime soda
Sugar substitute suitable for baking to equal 1/2 cup sugar
1-1/2 tsp. apple pie spice

Spray slow cooker with butter-flavored Pam. Combine bread pieces and apples in slow cooker. In a small bowl, combine apple juice, soda, sugar substitute and apple pie spice. Drizzle evenly over bread mixture. Mix gently to combine. Cover and cook for 6 hours on low, or until done. Mix well before serving.
Makes 6 servings. Each: 3 POINTS

COWBOY STEW IN A CROCKPOT

1-1/4 lbs. beef stew meat
4 potatoes, unpeeled, cut into 4" pieces
1/2 cup onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 (28 oz.) can baked beans in BBQ sauce

Mix beef, potatoes, onion, salt, and pepper in a crockpot. Spread beans over beef mixture. Cover and cook on low for 8-10 hours or until beef is tender.
Makes 6 servings. Each: 7 POINTS

VANILLA TAPIOCA PUDDING

3 cups skim milk
1/4 cup quick cooking tapioca
1/2 cup Splenda granular
1 tbsp. cornstarch
1 tbsp. vanilla extract
3-4 drops yellow food coloring

Pour milk in a medium saucepan. Evenly sprinkle tapioca over top and let set for 5 minutes to soften. Stir in Splenda granular and
cornstarch. Cook over medium heat until mixture thickens and comes to a boil, stirring constantly. Remove from heat. Add vanilla extract and yellow food coloring. Mix well to combine. Evenly spoon into 4 dessert dishes. Refrigerate for at least 1 hour.
Makes 4 servings. Each: 2 POINTS

CHEWY WALNUT BROWNIES

3/4 cup flour
1/4 cup unsweetened cocoa
3/4 cup Splenda granular
1 tsp. baking powder
1/2 cup chopped walnuts
1/4 cup reduced calorie margarine
1/2 cup no sugar added applesauce sweetened with Splenda
2 eggs or equivalent in egg substitute
1 tbsp. vanilla extract
2 tbsp. mini chocolate chips

Preheat oven to 350 degrees. Spray an 8x8" baking dish with butter Pam. In a large bowl, combine flour, cocoa, Splenda, and baking powder. Stir in walnuts. IN a small bowl, combine margarine, applesauce, eggs, and vanilla extract. Mix well using a wire whisk. Add wet mixture to dry mixture. Mix gently just to combine, using a sturdy spoon. Fold in chocolate chips. Spread batter into prepared baking dish. Bake for 25-30 minutes. Place cake pan on a wire rack and allow to cool completely.
Makes 16 bars. Each: 4 POINTS

CHOPS IN A CROCKPOT

6 whole pork loin chops, browned
1 whole onion, chopped
3 tbsp. ketchup
10-1/2 oz. 98% fat-free cream of chicken soup
2 tsp. Worcestershire sauce

Place all into crockpot and cook on low about 4-5 hours.
Makes 6 servings. Each: 4 POINTS

PEPSI AND PORK IN THE CROCKPOT

1 (10 oz.) can reduced-fat cream of mushroom soup
2 tbsp. reduced-sodium soy sauce
1 (12 oz.) can Diet Pepsi
4 (3 oz.) pork chops, trimmed well

Mix the soup, soy sauce, and Diet Pepsi together in the bottom of a crockpot. Place the chops in the mixture and cook on medium high for about 4-6 hours. Meat will be very tender.
Makes 4 (3 oz.) servings. Each: 5 POINTS

POT OF PIZZA

8 oz. extra lean ground beef or turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup (one 2.5 oz. jar) sliced mushrooms, drained
1-3/4 cup (one 15 oz can) Hunt's tomato sauce (or Hunt's pizza sauce)
1 tsp. Italian seasoning
1 tsp. pourable Splenda
3 cups cooked noodles, rinsed and drained
1/4 cup shredded reduced-fat cheddar cheese
1/4 cup shredded reduced-fat mozzarella cheese

In a large skillet, sprayed with olive-oil flavored Pam, brown meat,
onion, and green pepper. Stir in mushrooms, tomato sauce, Italian
seasoning, and Splenda. Pour mixture into a crockpot sprayed with butter-flavored Pam. Spread noodles over meat mixture. Sprinkle with parmesan cheese. Layer cheddar and mozzarella cheeses evenly over the top. Cover and cook on low for 6-8 hours. Mix well before serving.
Makes 6 (1 cup) servings. Each: 6 POINTS

DILLED RANCH POPCORN

4 quarts air-popped popcorn
Refrigerated butter-flavored cooking spray
1 (1 oz) ranch-style dip mix
1 tsp. dried dill weed
1/2 tsp. onion powder
1/4 tsp. dried lemon peel

Put popcorn in a large bowl and lightly coat with Pam. Sprinkle with remaining ingredients. Toss and spray again. Toss again and serve.
Makes 8 servings. Each: 1 POINT

CARAMEL APPLE SALAD

1 small pkg. sugar-free butterscotch instant pudding
8 oz. crushed pineapple and juice (not sweetened)
3 cups chopped apples
8 oz. fat-free Cool Whip
1 cup mini marshmallows

Combine pudding and pineapple. Add apples and mix. Fold in Cool Whip and marshmallows.
1 cup = 2 POINTS

SUGAR-FREE HOLIDAY NOG

1 small pkg. sugar-free instant vanilla pudding mix
7 cups skim milk, divided
1-2 tsp. vanilla extract or rum flavoring
2-4 pkts. artificial sweetener
1 cup evaporated skim milk

Combine pudding mix, 2 cups of milk, vanilla and sweetener in a bowl; mix according to pudding directions. Pour into a 1/2 gallon container with a tight fitting lid. Add 3 cups of milk; shake. Add remaining milk; shake well. Chill.
1 cup = 2 POINTS

OREO MOUSSE

1 (12 oz.) carton, fat-free frozen whipped topping, thawed
1 (1.4 oz.) pkg. sugar-free chocolate pudding mix
6 reduced-fat Oreo cookies

Pour whipped topping to a large mixing bowl. Sprinkle pudding mix into the topping. Stir the mixture with a large spoon until the pudding mix begins to dissolve in the whipped topping. Place the cookies into the bowl of a food processor and process the cookies until they are crumbly. Gently fold the cookie crumbs into the whipped topping. Spoon the mousse into individual parfait glasses and top with crumbed cookies or a maraschino cherry. Cover and refrigerate for at least 8 hours before serving.
Makes 4 servings. Each: 4 POINTS

Thanks for the WW recipes. I have been OP since the beginning of last year and have lost 78#. Only 11 more to goal! Anyway am always looking for low point crockpot recipes. These look good. Thanks again and good luck to you.

Have you made the Oreo mouse? I am considering making it for company for new years eve? Any suggestions or hints if you have made it already?

Traci~ Sorry I can't offer any suggestions as I haven't actually made the mousse myself. However I did have some that was made by a friend of mine and it was very good!

Let me know how it goes if you do decide to make it.

I'm a lurker here, but just wanted to let you all know I make the cowboy stew ALL the time and it is awesome!! I don't really like baked beans, but I use bush's homestyle (can I say the brand?)and add about a tablespoon of ketchup to it too. Yum Yum! It's now a favorite request of people from my church.
